Today I’m sharing an easy edamame salad that basically just involves chopping and tossing. I’m using grape tomatoes, avocado, jalapeno, cilantro, green onions, and fresh dill. Edamame is the star here and it blends so well with black beans, lentils, corn,and all the raw veggies and herbs. The dressing couldn’t be any simpler. Just olive oil, lime juice, red wine vinegar, salt, and pepper Be sure and follow @youcare.selfcare for more easy plant based recipes! •3 cups shelled edamame (I buy them frozen and boil for 2 minutes) •1 can black beans, rinsed and drained •1 cup corn •1 cup cooked lentils •1u002F2 cup grape tomatoes, halved •1u002F2 cup chopped cilantro •1u002F4 cup chopped dill •3 diced green onions •1 diced jalapeno •1 large avocado, diced •1u002F4 cup lime juice •2 tablespoons olive oil •1 tablespoon red wine vinegar salt and pepper to taste Toss!
